Unroasted Chilli Powder from Sri Lanka - gently dried red chilli fruits (Capsicum annuum), ground directly into a bright red, finely milled powder - without prior roasting. The unroasted powder retains the fruity, fresh aromas of the chilli fruit, some of which are lost during pan roasting. Perfect for all uses where direct heat and fruity flavour are called for - classic Western curry, chilli con carne, Mexican salsas, sambals and hot marinades.

Flavour profile & taste

Directly hot with a fruity, fresh note and a slightly sweet depth from the ripe chilli fruit. Bright red to deep red in colour (unlike the dark red-brown roasted powder).

Origin

Our chilli fruits grow in the traditional growing regions of our partner families in Sri Lanka. The plants (Capsicum annuum) are cultivated by hand in a tropical climate, the ripe red fruits harvested by hand at optimum ripeness, washed and gently dried on wooden trays. The dried fruits are then mechanically ground straight into a fine powder - deliberately WITHOUT prior roasting, to preserve the direct heat and the fresh, fruity aromas.

Quality assurance: We rely on rapid drying, dry storage and controlled processing. We only communicate specific laboratory or batch evidence where it is available for the goods in question.

Use

Unroasted Chilli Powder is the form for direct, fruity heat without smoky aromas:

  • Chilli con carne: 1-2 tsp per pot for classic American-Mexican heat
  • Western-style curry: 1 tsp in chicken curry, lentil dhal or vegetable curry for direct heat
  • Mexican salsas: ½ tsp in tomato salsas, guacamole or picadillo
  • Indonesian & Thai sambals: 1-2 tsp in homemade sambal pastes
  • Spicy marinades: 1 tsp in marinades for tofu, meat, fish - the fruity freshness is retained

Dosage: ¼-½ tsp per portion. Better to start with a small amount.

Tip from the kitchen: Unroasted chilli powder can also be stirred cold into salads, yoghurt dips or sour cream sauces - it releases its heat immediately without having to be fried in oil first. Unlike its roasted counterpart, it works without any problem in cold dishes.

Recipes

Authentic Chilli con Carne with Sri Lanka Chilli

Serves 4, preparation time: 45 minutes

Ingredients

  • 500 g minced beef
  • 1 onion, 2 garlic cloves, finely chopped
  • 400 g tomatoes (tinned)
  • 400 g kidney beans, drained
  • 1 tbsp Unroasted Chilli Powder from Sri Lanka
  • 1 tsp cumin, 1 tsp roasted paprika (sweet)
  • 1 bay leaf, salt, pepper
  • 200 ml beef stock
  • 1 tbsp olive oil

Method

  1. Sweat the onion and garlic in the olive oil for 3 minutes
  2. Add the mince, fry until crumbly, season with salt
  3. Add the chilli powder, cumin and paprika - toast together for 1 minute
  4. Add the tomatoes, stock and bay leaf, simmer for 25 minutes
  5. Add the kidney beans 10 minutes before the end, season to taste, serve

Note: Unroasted Sri Lanka chilli powder is more intense than the usual Mexican chilli blend - 1 tbsp is enough for 4 people with moderate heat.
