The BLACKBOX ON FIRE combines six characteristic spices from Sri Lanka into a versatile barbecue set. You can use it to mix robust rubs, fine-tune marinades, season vegetables and prepare matching side dishes or sauces. Each spice stays separately packaged, so you decide the flavour and heat for every dish yourself.

Aroma profile & taste

The six spices cover a broad spectrum of flavours for the barbecue:

  • Turmeric: earthy, warm and slightly bitter
  • Cracked black pepper: robust, warm-hot and textured
  • Chilli flakes: fruity and distinctly hot
  • Ceylon Cinnamon C5: finely sweet, warm and slightly citrusy
  • Organic lemongrass: fresh, bright and lemony
  • Sri Lanka Curry: roasted, spicy and hot

This lets you put together both clear individual flavours and balanced rubs and marinades.

Origin

All six spices come from Sri Lanka. Turmeric and organic lemongrass come from Jaffna in the north of the island. The black pepper grows in the highland growing areas of Matale, Kandy and Kegalle. Ceylon cinnamon comes from the central region of Sri Lanka. Chilli is cultivated in traditional growing areas. The Sri Lanka curry is blended and ground from roasted ingredients according to a family recipe.

Use

The BLACKBOX is intended as a building-block kit for barbecue dishes:

  • Steak and beef: Use cracked pepper with chilli flakes and a small amount of cinnamon as a dry rub.
  • Chicken: Stir turmeric, lemongrass and curry with oil, lime juice and salt into a marinade.
  • Grilled vegetables: Mix curry or turmeric with oil and apply thinly before grilling.
  • BBQ sauce: Work chilli, pepper and a small pinch of Ceylon cinnamon into tomato or fruit sauces.
  • Side dishes: Use curry and turmeric for rice, lentils or potatoes.

Dosage: Start with 1/2 to 1 tsp per portion. Dose chilli flakes and Sri Lanka curry carefully and increase to taste.

  • Cracked Black Pepper: black pepper (Piper nigrum), cracked, 100 %.
  • Chilli Flakes: chilli (Capsicum annuum), dried and crushed into flakes, 100 %.
  • Ceylon Cinnamon C5 Powder: Ceylon cinnamon (Cinnamomum verum), ground, 100 %.
  • Organic Lemongrass Powder: lemongrass* (Cymbopogon citratus), ground, 100 %.

Sri Lanka Curry Powder: 40 % roasted red chilli, 40 % coriander seeds, 5 % fennel seeds, 4 % black pepper, 3 % cumin, 3 % red wholegrain rice, 1.5 % lentils, 1 % turmeric, 1 % curry leaves, 0.5 % fenugreek, 0.5 % mung beans, 0.5 % mustard seeds. All ingredients roasted and ground.

Allergen: The Sri Lanka Curry contains MUSTARD. According to the product information available, the other five products contain no allergens requiring labelling.

Nutritional values Sri Lanka Curry per 100 g: energy 1878 kJ / 449 kcal; fat 18.8 g, of which saturates 1.4 g; carbohydrate 56.6 g, of which sugars 2.7 g; fibre 31.0 g; protein 13.4 g; salt 0.21 g. The values are averages and may vary slightly from batch to batch.

Storage: Store in a cool, dry place away from light. The batch-specific best-before date is printed on each individual pouch.

Recipes

BLACKBOX barbecue platter for 4 people

Ingredients

  • 600 g chicken or tofu
  • 500 g mixed vegetables for grilling
  • 2 tbsp oil
  • 2 tsp Turmeric Powder
  • 1 tsp Organic Lemongrass Powder
  • 2 tsp Sri Lanka Curry Powder
  • 1 tsp cracked black pepper
  • Chilli flakes to your preferred level of heat
  • 1 small pinch of Ceylon C5 Cinnamon Powder
  • Lime juice and salt to taste

Method

  1. Mix together the oil, lime juice, turmeric, lemongrass, curry, pepper and cinnamon.
  2. Marinate the chicken or tofu for at least 30 minutes.
  3. Cook the meat or tofu and the vegetables on the grill. Sprinkle over the chilli flakes only at the end, to your preferred level of heat.
  4. Serve with curry rice, bread or a fresh salad.
