Description

Chilli Flakes from Sri Lanka - processed without stems and with few seeds. Unlike the finely milled chilli powder, our chilli flakes retain the characteristic fruit structure and release their heat progressively - perfect for pizza, pasta, Asian wok dishes and any food in which pieces of chilli should remain visible. Our partner families grow the chilli plants in Sri Lanka's tropical climate and dry the fruits traditionally in the sun.

Flavour profile & taste

Fruity and hot with sweet notes and a slightly smoky depth. Sri Lankan chilli from traditional cultivation brings more complex aromas than mainstream industrial produce - the slow, gentle drying preserves the fruity aromas, while the seeds that remain provide a characteristic spiciness.

Origin

Our chilli fruits grow in the traditional growing regions of our partner families in Sri Lanka. The plants (Capsicum annuum) are cultivated by hand in a tropical climate - the ripe red fruits are harvested by hand at optimum ripeness, washed and gently dried on wooden trays. The dried fruits are then coarsely crushed into flakes and packed on site in sealed packaging.

Quality assurance: We rely on rapid drying, dry storage and controlled processing. We only communicate specific laboratory or batch evidence where it is available for the goods in question.

Use

Chilli flakes are the universal form with visible pieces of chilli:

  • Pizza seasoning: 1 tsp per finished pizza for sprinkling - a typical Italian tradition
  • Pasta aglio e olio: ½ tsp while sweating garlic in olive oil - a classic southern Italian pasta
  • Asian wok dishes: 1-2 tsp in stir-fries with garlic, ginger and soy sauce
  • Sri Lankan curry: 1-2 tsp flakes in curries and sambols for authentic Sri Lankan flavour
  • BBQ marinades: 1 tsp in marinades for spicy barbecue food - the flakes cling well to the meat

Dosage: ½-1 tsp per portion depending on heat tolerance. Better to start sparingly.

Tip from traditional cooking: Sweat chilli flakes briefly in hot oil - this releases the fat-soluble aromatic compounds better. But be careful: do not heat for too long, otherwise they turn bitter.

Recipes

Pasta aglio e olio with Sri Lanka chilli flakes

Serves 2, preparation time: 12 minutes

Ingredients

  • 200 g spaghetti
  • 4 garlic cloves, finely chopped
  • ½ tsp Chilli Flakes from Sri Lanka
  • 4 tbsp good olive oil
  • Salt, freshly grated Parmesan
  • Optional: fresh parsley

Method

  1. Cook the spaghetti until al dente in plenty of salted water
  2. Heat the olive oil in a frying pan and sweat the garlic over a medium heat for 1 minute
  3. Add the chilli flakes and let them infuse for 30 seconds
  4. Drain the spaghetti, reserving a little of the pasta water
  5. Add the pasta to the pan, bind with the pasta water and sprinkle with Parmesan

Note: With Sri Lanka chilli flakes, start with a measured amount of heat - they are more intense than the usual Italian peperoncino.
