Roasted Chilli Powder from Sri Lanka - gently dried red chilli fruits (Capsicum annuum), traditionally roasted in the pan and then ground into an intense dark red powder. Roasting before grinding is the secret weapon of Sri Lankan cuisine - it develops nutty, smoky aromas that raw chilli powder completely lacks. Our partner families traditionally roast the dried chilli fruits on hot pans until they take on a deep dark red to brown colour, before they are ground into a fine powder.

Flavour profile & taste

Deep, dark and smoky with nutty undertones and a caramel-like sweet depth from the roasting. Roasted chilli powder is THE secret ingredient in authentic Sri Lankan cuisine - above all in sambols (fresh chilli pastes), black curries and roasted curry powder.

Origin

Our chilli fruits grow in the traditional growing regions of our partner families in Sri Lanka. The plants (Capsicum annuum) are cultivated by hand in a tropical climate, the ripe red fruits harvested by hand at optimum ripeness and gently dried on wooden trays. Then comes the decisive step: the dried fruits are roasted in flat pans over an open fire until they take on a deep dark-red to brown colour - a technique that has been perfected over generations in Sri Lankan cooking. Only after roasting are they ground into a fine powder.

Quality assurance: We rely on rapid drying, dry storage and controlled processing. We only communicate specific laboratory or batch evidence where it is available for the goods in question.

Use

Roasted chilli powder is the key to authentic Sri Lankan cooking - here are the most important uses:

  • Sri Lankan sambol: 2 tsp roasted chilli powder with onions, lime, Maldive fish and salt - classic Pol Sambol
  • Black Curry: 1-2 tsp in Sri Lankan curries with coconut milk - the typical dark colour comes from the roasted powder
  • Roasted Curry Powder: as a base ingredient in home-made curry powder blends (with roasted coriander and cumin seeds)
  • Marinades with depth: 1 tsp in BBQ marinades for meat, tofu or tempeh - adds smoky complexity without liquid smoke
  • Chilli oil infusions: let 1 tsp steep in hot oil, allow to cool - home-made smoky chilli oil

Dosage: ½-1 tsp per portion. Roasted chilli powder is intense in aroma - better to start with a small amount.

Tip from traditional Sri Lankan cooking: briefly sweat the roasted chilli powder in hot coconut oil before adding the other ingredients - this brings out the nutty, smoky complexity at its best.

Recipes

Authentic Pol Sambol (Sri Lanka Coconut Chilli Sambol)

Serves 4, preparation time: 8 minutes

Ingredients

  • 200 g freshly grated coconut (or 100 g desiccated coconut, soaked in 4 tbsp water)
  • 1 tbsp Roasted Chilli Powder from Sri Lanka
  • 1 small red onion, very finely diced
  • Juice of half a lime
  • 1 tsp salt
  • Optional: 1 tsp Maldive fish (tuna powder)

Method

  1. Soak the desiccated coconut in water for approx. 3 minutes, drain
  2. Knead the diced onion with the salt and lime juice for 1 minute - this takes away the sharpness
  3. Put the coconut, roasted chilli powder and onion-lime mixture in a bowl
  4. Mix all the ingredients vigorously with your hands or a fork until the colour is evenly distributed
  5. Serve immediately as a side dish with rice, curries or roti

Note: Pol Sambol is THE side dish in every Sri Lankan household - roasted chilli powder cannot be swapped for unroasted here.
