Ground Black Pepper (powder) from Sri Lanka - very finely ground peppercorns (Piper nigrum) from the traditional highland growing areas of Sri Lanka, ready to use for all applications that need an even pepper seasoning without pieces. Unlike whole peppercorns or coarse cracked pepper, our fine pepper powder disperses finely and evenly in sauces, soups and dips - perfect for professional kitchens and bakeries. Our partner families cultivate the pepper plants in a tropical highland climate at 600 to 1,200 metres above sea level.

Flavour profile & taste

Full-flavoured with a warm, immediately noticeable heat and woody undertones - thanks to its larger surface area, the finely ground powder delivers the most intense aroma per gram. Sri Lankan pepper from highland cultivation brings multi-layered complexity - noticeably more nuanced than industrial mainstream goods from Brazil or Vietnam, which are usually one-dimensionally hot.

Origin

Our black pepper grows in the highland growing regions of Sri Lanka - in the central districts of Matale, Kandy and Kegalle at 600 to 1,200 metres above sea level. The slow ripening in cooler high-altitude areas results in a higher content of essential oils and a complex, multi-layered aroma. The unripe green berries are harvested by hand at optimum ripeness, gently dried and then ground into a fine powder in Jaffna - packed in sealed packaging immediately afterwards.

Use

Ground black pepper is the form for even seasoning without visible pieces:

  • Sauces & dressings: ¼-½ tsp in béchamel, hollandaise, salad dressings - remains visible in the dish
  • Soups & stews: stir in ½ tsp per litre after cooking - even heat throughout the whole soup
  • Baked goods: ¼ tsp in crispbread dough, savoury rolls or pepper biscuits - distributes evenly through the dough
  • Dips & spreads: ¼ tsp in hummus, cream cheese dips or avocado spreads - intense seasoning without pieces of pepper in the mouth
  • Dry marinades & rubs: 1-2 tsp in BBQ spice blends for smokers and grills - clings to the meat better than cracked pepper

Dosage: pepper powder is more intense than whole peppercorns (more surface area) - better to start with ¼ tsp. Powdered pepper has a more direct, immediately noticeable heat than pepper freshly ground from peppercorns.

Tip from the kitchen: do not heat pepper powder for long - the essential oils do not tolerate cooking above 80 °C. Ideally stir it in after cooking or shortly before serving. For baked goods: mix the powder with the dry ingredients so that it distributes evenly.

Recipes

Creamy Pepper Béchamel with Sri Lanka Pepper

Makes 500 ml béchamel, preparation time: 10 minutes

Ingredients

  • 40 g butter
  • 40 g flour
  • 500 ml milk
  • 1 tsp Ground Black Pepper from Sri Lanka
  • 1 pinch of nutmeg
  • Salt to taste

Method

  1. Melt the butter in a saucepan, stir in the flour and sweat for 1 minute
  2. Gradually pour in the milk while stirring until a smooth sauce forms
  3. Simmer for 5 minutes, stirring constantly
  4. Remove from the heat, stir in the pepper powder, nutmeg and salt
  5. Serve straight away - with pasta, lasagne or as a base for a cheese sauce

Note: Sri Lanka pepper powder is only added AFTER cooking - this way the essential oils are fully preserved and the sauce gets a warm, multi-layered heat instead of a one-dimensional spike.
