Ceylon Cinnamon Sticks from Sri Lanka - whole sticks from the true Ceylon cinnamon tree (Cinnamomum verum) in C5 premium quality (Continental Grade 5 - one of the highest-quality official Sri Lanka cinnamon grades) from the central region of Sri Lanka. The light brown, finely layered and brittle Ceylon cinnamon sticks are the high-quality original and botanically clearly distinct from cassia cinnamon (Cinnamomum cassia), which is often sold as cinnamon in supermarkets. Our partner families harvest the delicate inner bark layers from selected trees by hand and roll them into sticks in the traditional way - the characteristic multi-layered structure comes from laying several thin layers of bark on top of one another.

Aroma profile & taste

Delicately sweet, floral and warm with a subtle woody note and a slightly lemony freshness. Ceylon sticks release their aroma slowly and evenly - perfect for punch, mulled wine, rice dishes and every use where the stick stays in the pot and is taken out again before serving. The light brown colour and the fragile layered structure are the hallmarks of authentic Ceylon cinnamon - cassia sticks are dark brown, compact and hard.

Origin

Our Ceylon cinnamon grows in the central regions of Sri Lanka at 400-700 metres above sea level, where Cinnamomum verum has traditionally been cultivated. Our partner families harvest the delicate inner bark layers from selected trees by hand - using an elaborate technique that has been perfected over generations. The harvested pieces of bark dry in the sun, naturally curling into the characteristic light-brown Ceylon cinnamon sticks. We deliver sealed finished products to Darmstadt.

Use

Ceylon cinnamon sticks are the form for hot drinks and dishes in which the stick stays in the pot:

  • Mulled wine & punch: let 1-2 sticks per litre steep while warming - a Christmas classic
  • Chai tea: bring 1 stick to the boil in 500 ml of tea with ginger, cardamom and cloves
  • Rice dishes: 1 stick in the rice water - for aromatic basmati rice
  • Apple sauce & compote: let 1 stick steep while cooking, remove before puréeing
  • Tagine & lamb stews: 1 stick in Moroccan or Arabic braised dishes

Dosage: 1-2 sticks per litre of liquid, depending on the intensity you want. Ceylon sticks release their aroma more slowly than cassia sticks - 10-15 minutes of steeping is ideal. Unlike powder, the stick can be taken out again.

Tip: a stick can be used several times - after the mulled wine, let it drain well, dry it and use it again next time (the aroma is a little milder the 2nd time).

Recipes

Classic mulled wine with Ceylon cinnamon sticks

Makes 1 litre, preparation time: 20 minutes

Ingredients

  • 750 ml dry red wine
  • 250 ml orange juice
  • 2 Ceylon cinnamon sticks from Sri Lanka
  • 4 cloves, 2 star anise, 4 cardamom pods
  • 1 organic orange (juice + zest)
  • 2 tbsp brown sugar or honey

Method

  1. Put all the ingredients in a saucepan and heat slowly - not above 80 °C
  2. Leave to infuse over a low heat for 15-20 minutes (do not boil!)
  3. Strain through a fine sieve into cups
  4. Garnish with a cinnamon stick or a slice of orange and serve immediately

Note: Ceylon sticks give a subtler, more floral aroma than cassia - which goes particularly well with wine and citrus fruit.
