Ceylon Cinnamon Powder from Sri Lanka - finely ground bark of the true Ceylon cinnamon tree (Cinnamomum verum) in C5 premium quality (Continental Grade 5 - one of the highest-quality official Sri Lanka cinnamon grades), from the central region of Sri Lanka. Ceylon cinnamon is the true cinnamon - botanically clearly distinct from the common cassia cinnamon (Cinnamomum cassia), which is often sold in supermarkets as «cinnamon». Our partner families harvest the delicate inner bark layers from selected Cinnamomum verum trees, roll them into fine sticks in the traditional way (light, papery and crumbly), and then grind them into a fine, light brown powder with the characteristic delicate Ceylon cinnamon aroma.

Aroma profile & taste

Delicately sweet, floral and warm with a subtle woody note and a slightly lemony freshness - noticeably subtler and more multi-layered than the robust, sharper cassia powder. Ceylon cinnamon from Sri Lanka is the high-quality variety - the light brown colour and the fine, almost floral aroma structure are the hallmarks of authentic goods. In top international gastronomy, Ceylon cinnamon is used almost exclusively for baking, desserts and fine hot drinks.

Origin

Our Ceylon cinnamon grows in the central regions of Sri Lanka - in a warm, humid climate at 400-700 metres above sea level, where Cinnamomum verum has traditionally been cultivated. Here, our partner families harvest the delicate inner bark layers from selected trees by hand - using an elaborate technique that has been perfected over generations. The harvested pieces of bark dry in the sun, curling into the characteristic light-brown Ceylon cinnamon sticks, which are then ground into a fine powder. We deliver sealed finished products to Darmstadt.

Use

Ceylon cinnamon powder is the high-quality choice for baked goods, desserts and fine hot drinks:

  • Baked goods: 1-2 tsp in biscuit dough, apple cake, kanelbullar, strudels - the delicate, sweet aroma is perfect
  • Hot drinks: ½ tsp in cocoa, coffee, chai tea, golden milk or mulled wine
  • Muesli & porridge: sprinkle ½ tsp over oats, yoghurt or smoothie bowls
  • Apple sauce & desserts: 1 tsp in apple sauce, compote, rice porridge or rice pudding
  • Moroccan & Arabic cuisine: 1 tsp in tagines, couscous dishes or Moroccan lamb stews

Dosage: ½-1 tsp per portion. Ceylon cinnamon is noticeably subtler in flavour than cassia - use a little more if you are used to the typical «supermarket cinnamon».

Tip from the kitchen: mix Ceylon cinnamon into the batter first rather than sprinkling it over finished dishes - the aroma develops best in combination with fat and under heat. For hot drinks, briefly bring the powder to the boil with milk or water.

Recipes

Classic Kanelbullar (Swedish Cinnamon Buns)

Makes 16, preparation time: 90 minutes (incl. proving time)

Ingredients for the dough

  • 500 g flour, 50 g sugar, 1 sachet dried yeast, 1 tsp salt
  • 50 g soft butter, 250 ml lukewarm milk, 1 egg

Ingredients for the filling

  • 100 g soft butter
  • 100 g brown sugar
  • 2 tbsp Ceylon Cinnamon Powder from Sri Lanka
  • 1 egg, beaten, for brushing
  • Pearl sugar for sprinkling

Method

  1. Knead the dough, leave to rise for 1 hour
  2. Roll the dough out into a rectangle (40x60 cm), spread with butter, sprinkle with the sugar and cinnamon mixture
  3. Roll up from the long side, cut into 16 equally thick buns
  4. Place on a baking tray, leave to prove for a further 30 min
  5. Brush with egg, sprinkle with pearl sugar, bake for 12-15 min at 200 °C

Note: Ceylon cinnamon is the classic Swedish choice for kanelbullar - milder and finer than cassia, it lets the sugar and butter develop more flavour.
