Jackfruit Powder from Sri Lanka - finely milled powder made from jackfruit (Artocarpus heterophyllus) harvested shortly before ripening, gently dried and without additives. The jackfruit is the largest tree fruit in the world and grows in the tropical lowland regions of Sri Lanka. As is usual for plant-based meat and flour alternatives, we harvest the fruit before it is fully ripe - this gives a mild, neutral powder, ideal as a plant-based flour and binder substitute in vegan cooking and baking.

Flavour profile & taste

Mild and neutral with only a subtly fruity note - without the intense sweetness of fully ripe jackfruit. That is exactly what makes it versatile: it binds, gives structure and volume without dominating the dish's own flavour. Pale yellow to cream-coloured as a powder.

Origin

Our jackfruit comes from the tropical lowland regions of Sri Lanka. Here the mighty jackfruit trees grow in a warm, humid climate and bear fruit all year round. Our partner families harvest the fruit shortly before full ripeness, cut it open, separate the flesh from the core by hand, cut it into thin slices and dry it gently. The dried fruit flesh is then mechanically ground into a fine powder.

Use

Jackfruit Powder is a mild, neutral fruit powder - ideal as a plant-based substitute for flour and binding agents in vegan cooking:

  • Baking: Replace 2-3 tbsp per 500 g of flour - keeps doughs moist and gives structure (bread, muffins, pancakes)
  • Binding & thickening: Bind soups, sauces and vegan spreads to a creamy consistency
  • Vegan bowls & porridge: 1 tsp for more body and a subtly fruity note
  • Plant-based patties & fritters: as a binding agent instead of egg or flour
  • Energy balls & bars: as a neutral fruit base

Dosage: For baking 2-3 tbsp per 500 g of flour, for binding 1-2 tsp per portion.

Tip: Let Jackfruit Powder swell in lukewarm water or a plant-based drink (1 tbsp powder + 3 tbsp liquid, 5 min) - this way it binds optimally.

Recipes

Moist Banana and Jackfruit Cake

Makes 1 loaf tin, baking time: 50 minutes

Ingredients

  • 2 ripe bananas
  • 200 g flour
  • 3 tbsp Jackfruit Powder
  • 100 g sugar (or birch sugar)
  • 120 g soft butter (or plant-based alternative)
  • 2 eggs (or vegan substitute)
  • 1 tsp baking powder
  • 1 pinch of salt

Method

  1. Preheat the oven to 180 °C, grease the tin
  2. Purée the bananas
  3. Beat the butter and sugar until fluffy, add the eggs
  4. Mix the flour, Jackfruit Powder, baking powder and salt, stir in
  5. Fold in the banana purée
  6. Pour into the tin and bake for 45-50 minutes

Tip: The Jackfruit Powder replaces part of the flour, binds the batter and makes the cake especially moist.

Vegan Jackfruit Pancakes

Makes approx. 8 pancakes, preparation time: 20 minutes

Ingredients

  • 200 g flour
  • 2 tbsp Jackfruit Powder from Sri Lanka
  • 1 tbsp baking powder
  • 250 ml plant-based milk
  • 1 tbsp oil
  • 1 pinch of salt

Method

  1. Mix the flour, Jackfruit Powder, baking powder and salt
  2. Stir in the plant-based milk and oil until a smooth batter forms
  3. Leave to rest for 5 minutes - the Jackfruit Powder binds and makes the pancakes fluffy (even without any egg)
  4. Fry in batches in a pan until golden brown

Tip: The Jackfruit Powder acts as a natural binder and replaces part of the flour.
