Sri Lanka Curry Powder from Sri Lanka - authentic roasted curry powder blend made to the original family recipe of our partner families. Unlike the mild, sweetish Indian curry powder blends, Sri Lanka curry is blended from traditionally roasted ingredients - which gives the powder its characteristic dark brown colour and its nutty, smoky, multi-layered aroma. THE base ingredient in every Sri Lankan kitchen - for chicken curry, fish curry, lentil dhal and vegetable curries. Single-origin ingredients straight from Sri Lanka, all roasted and blended in a single family-run manufactory, not industrially in centralised large mills.

Aroma profile & taste

Deep, dark and smoky with nutty undertones, warm spicy complexity and a robust heat. Sri Lanka curry powder is not a single spice but a carefully balanced blend of roasted chilli, coriander, fennel, black pepper, cumin, turmeric, curry leaves, fenugreek and mustard seeds. Roasting before grinding, as tradition demands, unlocks the nutty depth that raw curry powder completely lacks.

Origin

Our Sri Lanka curry powder is blended according to an original family recipe in the manufactory of our partner families - from carefully selected, roasted individual ingredients from the traditional growing regions of Sri Lanka. The individual spices are first roasted separately in flat pans (an elaborate technique that brings out the aroma to the full), then blended in the recipe proportions perfected over generations and mechanically ground into a fine powder. The sealed finished products are delivered to Darmstadt.

Use

Sri Lanka curry powder is THE base ingredient in Sri Lankan cooking - here are the most important uses:

  • Chicken curry (Kukul Mas): 2-3 tbsp per pot for 4 people with coconut milk, garlic, ginger and curry leaves
  • Fish curry (Malu Mirisata): 2 tbsp per pot with tomatoes, tamarind and fresh fish
  • Lentil dhal (Parippu): 1-2 tbsp for red lentils with coconut milk and turmeric
  • Vegetable curry (Sotti): 1 tbsp per pot for aubergine, pumpkin, sweet potato or spinach
  • Roasted Curry Powder Mix: as a base for your own curry powder blends or sprinkled over rice dishes

Dosage: for 4 portions: 2-3 tbsp depending on the intensity you want. Sri Lankan curry powder is noticeably more intense than the mild, sweetish Indian curry blends from supermarkets - better to start with 2 tbsp and season further.

Tip from traditional Sri Lankan cooking: always briefly sweat the curry powder in hot coconut oil with curry leaves and mustard seeds before adding the other ingredients - this brings out the nutty, smoky complexity at its best.

Ingredients: 40 % roasted red chilli, 40 % coriander seeds, 5 % fennel seeds, 4 % black pepper, 3 % cumin, 3 % red wholegrain rice, 1.5 % lentils, 1 % turmeric, 1 % curry leaves, 0.5 % fenugreek, 0.5 % mung beans, 0.5 % mustard seeds.

Recipes

Sri Lanka Chicken Curry (Kukul Mas Curry)

Serves 4, preparation time: 45 minutes

Ingredients

  • 600 g chicken, cut into pieces
  • 2 tbsp Sri Lanka Curry Powder from Sri Lanka
  • 1 large onion, 4 garlic cloves, 1 cm ginger (finely chopped)
  • 400 ml coconut milk
  • 2 tbsp coconut oil
  • 10 curry leaves, 1 tsp mustard seeds
  • 1 tomato, diced, 1 tsp tamarind paste
  • Salt, fresh coriander to garnish

Method

  1. Heat the coconut oil in a pan, sweat the mustard seeds, curry leaves and onion
  2. Add the garlic and ginger, fry briefly
  3. Stir in the Sri Lanka Curry Powder, toast for 30 seconds
  4. Add the chicken, brown it, add the tomato and tamarind paste
  5. Add the coconut milk, simmer for 25 minutes, season with salt
  6. Serve with rice and fresh coriander

Note: Sri Lanka Curry Powder is briefly toasted FIRST - this is THE step that gives the curry its typical depth.
